Recipe: Butternut Squash and Sage Soup


Serves: 6

Cooking time: 35 minutes


Ingredients

  • 1 large butternut squash, peeled and diced

  • 1 large onion, chopped

  • 2 carrots, chopped

  • 2 cloves garlic, crushed

  • 1 tablespoon olive oil

  • 1 litre vegetable stock (low-salt if preferred)

  • 6 to 8 fresh sage leaves (plus extra to garnish)

  • 100 ml cream (or oat cream for a dairy-free option)

  • Sea salt and cracked black pepper to taste


Method


  1. Sauté the base – Heat the olive oil in a large pot and add the onion, carrots, and garlic. Cook gently for 5 minutes until softened.

  2. Add the squash and sage – Stir in the diced butternut squash and fresh sage leaves. Cook for another 5 minutes to let the flavours develop.

  3. Simmer – Pour in the vegetable stock and bring to the boil. Reduce the heat and simmer for 20 minutes, or until the squash is tender.

  4. Blend until smooth – Remove from heat and blend until velvety. Stir in the cream, then season with salt and pepper to taste.

  5. Garnish and serve – Finish with a swirl of cream and a crisp sage leaf for that extra autumn touch.
