Ingredients
1 large butternut squash, peeled and diced
1 large onion, chopped
2 carrots, chopped
2 cloves garlic, crushed
1 tablespoon olive oil
1 litre vegetable stock (low-salt if preferred)
6 to 8 fresh sage leaves (plus extra to garnish)
100 ml cream (or oat cream for a dairy-free option)
Sea salt and cracked black pepper to taste
Method
Sauté the base – Heat the olive oil in a large pot and add the onion, carrots, and garlic. Cook gently for 5 minutes until softened.
Add the squash and sage – Stir in the diced butternut squash and fresh sage leaves. Cook for another 5 minutes to let the flavours develop.
Simmer – Pour in the vegetable stock and bring to the boil. Reduce the heat and simmer for 20 minutes, or until the squash is tender.
Blend until smooth – Remove from heat and blend until velvety. Stir in the cream, then season with salt and pepper to taste.
Garnish and serve – Finish with a swirl of cream and a crisp sage leaf for that extra autumn touch.
