Recipe: Crispy Cheesy Potato Stacks Christmas Side Dish
Serves: 12 stacks

Ingredients
6 medium potatoes, thinly sliced with mandolin if possible
4 tablespoons melted butter
2 teaspoons fresh thyme or mixed herbs
2 cloves garlic, grated
60 grams grated Parmesan or mature Irish cheddar
Sea salt and black pepper, to taste
Method
1. Prepare the oven
Preheat the oven to 200°C or 180°C fan. Lightly grease a 12 cup muffin tin.
2. Toss the potatoes
In a large bowl, mix the sliced potatoes with melted butter, herbs, garlic, grated cheese, salt and pepper until every slice is coated.
3. Stack the slices
Layer the slices into each muffin cup, stacking to the top. The potatoes shrink slightly during baking which creates the tall stacked shape.
4. Bake until crisp
Cover the muffin tin with foil and bake for 30 minutes. Remove the foil and bake for another 20 to 25 minutes until the edges are crisp and the centres are soft and tender.
5. Release and serve
Let the stacks rest for a few minutes before gently running a knife around each one to lift them out. Serve immediately as a festive, warming addition to any Christmas menu.
