Our experienced senior management team members are as diverse as our ingredients. But, just as with a great recipe, they combine perfectly, each adding a little magic and each working towards the same goal: to impress you and your colleagues every time you sit down to eat.

Mary has steered CCSL to its market-leading position. She started the company back in 1991 and is still fully involved in the day-to-day business, visiting clients and remote teams and making sure the vision of her company remains on track while continuously finding ways of improving our service.

Mary keeps all of the wheel turning. A hotel management graduate, she has worked in the catering industry for nearly 25 years. She manages all company contracts, both operationally and financially, by developing our business relationships and driving constant improvement within our operations.


General Manager

Anne is the numbers specialist. She leads a team of accountants and account technicians as well as the payroll department, ensuring everything runs smoothly. She also liaises with the operations managers to oversee the performance of their units and ensures that everything is ready for our clients on time


Financial Director

Orla is a fountain of knowledge, gleaned from over 30 years in the business. Our go-to person for quality and compliance issues, hygiene, crisis management and client relationships, comfortably setting standards that set us apart from our competitors.


Quality & Compliance Manager

Caroline is our people person. With over 25 years’ experience in human resources gained both in Ireland and the UK, Caroline makes a real difference by putting processes in place to inspire leadership and innovation, lead and nurture change and encourage creativity.


HR Manager

Margaret can make food dance on plates. Her passion is for food innovation and development, working with talented chefs and reputable, high quality local food suppliers to produce new dishes to exceptional standards. She has been with CCSL since 2002 and is an expert in special event catering.

Veronica is a true professional. She has 25 years’ experience in catering and is an energetic and self-motivated communicator and leader. She works really well with our clients, delivering in fast paced environments and always delivering on strategic visions for both company and clients alike.

John is your local contact. He has over 20 years’ experience in the hospitality industry and has worked a number of well-known hotels, including as a GM in the education sector where he managed a contract serving meals to over 4,000 people every day.

Julie Is the implementer of change, working strategically with clients. She is a high energy manager, achieving her goals by focusing on business strategy, organic growth, streamlining overheads, continual improvement of customer and client experience and raising business standards.
